Note: Cook time varies greatly with mass of roast (DUH). A 2-lb roast (bone-in) took me about 3 hrs at 300°. Plan accordingly.

Pat roast dry with paper towels. Add the dry rub. Sear all sides in dutch oven on stove top with oil. Remove the roast.

Sautee onions, garlic. Add chicken broth and the roast. Cook in oven until it is tender. Remove and pull pork apart. Add sauce.
